CHOCOLATE PB PALEO COOKIE DOUGH CUPCAKES


Mmmmmm cake and cookie in one. 

Yes. 

You most certainly did read that right. 

Why settle for one sweet treat when you can combine two?  

OK, don't be fooled by those funny looking brown cupcakes pictured above; they are seriously tasty! Hence also why this is a terrible shot, as I was gobbling the rest up whilst this was being taken... and yes, I may have broken a bit off that one on the right...I just couldn't wait!

These little chocolatey wonders are actually loaded with beef. Don't worry, they don't taste like beef. I PROMISE.

INGREDIENTS
(Serves 6)

CAKE MIX

  • I cup of almond flour
  • 10g of peanut flour
  • 3/4 cup of beef protein (I used chocolate peanut)
  • 3 tbsp coconut flour
  • 40g of honey (about 3 tbsp)
  • 2 tsp of coconut sugar
  • 1/4 cup of coconut oil
  • 1 whole egg (medium/large)
  • 1 tsp baking powder/soda
  • hand-full of dark chocolate dairy free chips
Pre-heat your oven to 375'F/190'C. Then in a large bowl whisk the egg, coconut oil (melted) and sugar. Once blended stir in the rest of the dry ingredients plus the honey. Finally, grab big handful of dark chocolate chips and stir agin until spread event through the mixture. Grease a muffin tray with coconut oil and fill each with the mixture. Bake for 20 minutes and leave too cool.  The top should be hard like a cookie and the bottom a fluffy almost raw cookie dough cake hybrid.
